This is an Ethiopia selection from the World Champion Series project, in collaboration with 2016 World Barista Champion Berg Wu.

Despite limited machinery and equipment in Ethiopia, the coffee was carefully pulped while preserving as much mucilage as possible.

It then underwent a three-stage density separation to select only the highest-density parchment,

which was immediately transferred to African beds for drying.

The quality of a honey process depends on factors such as mucilage content, fermentation during drying, humidity, drying speed, temperature, and sunlight.

To achieve a refined and high-quality result, every step of the process was meticulously managed.
